The doctors that are allowed to practice at this hospital are extremely well trained. Astrid and Gaston means Ultra Gourmet

Peru’s Finest, Chile’s Finest; Now in Panama

My first thought, on hearing that this restaurant was truly wonderful was, “what a strange name for a restaurant.” I soon learned it was named after two chefs, Gaston Acurio, and his German wife, Astrid who met and fell in love in Paris. Like all well trained French chefs they first offered French cuisine. However somewhere between graduation and 1994 Gaston re-discovered his native Peruvian cuisine and the fine fresh food it features: anticucho (a type of kebab), sanguche (sandwich), cebiche (a fish-based dish) and tacu tacu (rice and beans). During this period, he talked to Peruvian farmers, breeders and fishermen and built up business contacts. In 1999, he finally “outed” himself as a Peruvian chef, cooking in Peru, using Peruvian ingredients, Peruvian traditions and Peruvian memories.

Today there are several Astrid & Gaston’s in Madrid, Caracas, Bogota, Quito and Santiago, and one will open soon in Mexico City. In fact, Astrid & Gaston has just been named the best restaurant in Chile by the “Guia Culinary 2008”, based on a survey of restaurant goers. The restaurant was honored for its varied and elegant menu, which focuses on authentic Peruvian flavors. Its dessert menu won first place in that category.

Acurio trains his chefs in Peru and manufactures eight sauce bases there to distribute to the restaurants. So the quality of the food and its preparation is nothing short of perfection. The service is attentive without being overbearing, sometimes a rarity in Panamanian restaurants. The styling is minimalist with gray on gray and soft lighting playing a backdrop to the spectacular food. It is a real treat to watch your food prepared behind glass where you can see the cleanliness and the care involved.

The rich and famous come to dine in Astrid and Gaston and it is not at all unusual to see heads of state and their entourage enjoying this fine cuisine. The wines are from Chile and Argentina and are not overpriced, so you can truly enjoy a fine meal and not totally destroy the budget. Be sure to indulge in one of the desserts or better yet try the taster dessert so you can enjoy bites of many of their creations.

Remember life is short so enjoy everything, especially when you get an opportunity like eating at Astrid and Gaston’s wonderful gourmet restaurant.
